Robert is a 5th generation Texan who began learning his craft early with influences from his family’s southern cooking style blended with Texas barbecue. After gaining experience working in local bakeries and restaurants, he traveled west to receive formal education at the California Culinary Academy in San Francisco. Graduating with honors, Robert worked and studied with accomplished chefs on the west coast and in Santa Fe before returning to home and settling in Austin.
Robert continued to develop his craft and elevate his responsibilities in the kitchens of fine hotels, country clubs, and restaurants in the Austin area. As Executive Chef at Z’Tejas, he relocated to Las Vegas to open new restaurants, but his desire to return and stay in Austin brought him back. He served as Executive Chef at Dell’s Campus, and later joined the University of Texas Division of Housing and Food Service. There, as Executive Chef, he championed efforts to start campus food gardens, purchase from local farmers, and establish sustainable food practices to all campus kitchens. Additionally, Robert’s catering company continues to earn honors cooking for many of Austin’s large high-profile special events.
Robert loves gardening, foraging for wild edibles, and working with local farmers and growers. The consummate outdoorsman and camp cook, he also enjoys fishing, hiking, camping, and sampling local brews with friends and family at every opportunity.
